Heart Healthy Stuffed Portobello Mushrooms

Ingredients

  • 6 medium sized Portobello mushrooms
  • 12 oz cooked quinoa pilaf
  • 3 oz low cholesterol eggs
  • 3 oz Alpine Lace Swiss cheese
  • 12 oz cooked frozen spinach, chopped
  • 3 oz red lentils
  • 2 Tbsp fresh minced thyme
  • 2 Tbsp parsley
  • 2 Tbsp basil

Directions

  1. Clean Portobello mushrooms. Cut each into quarters.
  2. Combine remaining ingredients in a bowl
  3. Scoop ~ 1 oz of stuffing into each mushroom
  4. Bake 10-15 minutes at 300o

Yield: 24 servings
