Vegetarian Quesadillas

Ingredients

  • 1- 6 whole wheat tortilla
  • ¼ cup reduced fat Mexican blend shredded cheese
  • ¼ cup low sodium black beans, rinsed well
  • ¼ red bell pepper, diced
  • ¼ yellow bell pepper, diced
  • 2 Tbsp. non-fat sour cream
  • 2 Tbsp. fresh salsa
  • 2 slices avocado

Directions

  1. Place tortilla on a non-stick frying pan.
  2. Sprinkle ½ of the cheese so it covers ½ of the tortilla.
  3. Layer the beans, red pepper, and yellow bell pepper over the cheese.
  4. Sprinkle the remaining cheese over the beans and bell peppers.
  5. Fold the tortilla in half, so the empty surface covers the surface with ingredients.
  6. Cook over medium heat until tortilla is lightly browned. Flip the tortilla and cook until surface is lightly browned.
  7. Garnish with sour cream, salsa, and avocado.

Yield: 1 serving
Serving Size: 1 quesadilla
