Recipe Note: The name "Niçoise" refers to the French city of Nice, where this type of salad originated. The Niçoise salad is made up of a variety of vegetables topped with tuna and/or anchovy.
Ingredients
- 2 cups whole wheat pasta
- ¼ cup chopped fresh basil
- 2 cloves garlic, minced
- ¾ cup diced tomato
- ½ ripe avocado, diced
- ¼ cup thinly sliced red onion
- 2 tablespoons chopped black olives
- ¼ teaspoon crushed red pepper flakes
- ¼ cup bottled fat free Italian dressing
- 1 can (6 ounce) water-packed tuna, drained and flaked
- 4 green leaf lettuce leaves
Directions
- In a large saucepan, cook the pasta according to the package directions.Drain, then rinse briefly under cold water. Drain.
- In a small bowl, combine the Italian dressing, basil, garlic, and crushed red pepper.
- In a large bowl, combine the pasta, tuna, tomato, avocado, red onion, and olives.
- Add the dressing and toss until evenly coated. Line plates with the lettuce leaves and spoon the salad on top.
Yield: 4 servings
