Quick and Easy Chinese Greens

Ingredients

  • 2 dozen cilantro leaves (½ cup)
  • 1 cup red cabbage - sliced thin
  • 1 cup bok choy - sliced thin
  • 1 med red onion - sliced thin
  • 1 cup snow peas - ends snipped off
  • 1 half yellow bell pepper - sliced thin
  • 2 Tbsp olive oil
  • ½ tsp black pepper
  • ½ Tbsp lite soy sauce
  • ¼ tsp cinnamon
  • ¼ tsp ginger
  • ½ tsp garlic (minced or dry)

Preparation

  1. Separate cilantro leaves from the stems; chop the stems, set aside the leaves for garnish.
  2. In a bowl, combine the olive oil, black pepper, soy sauce, cinnamon, ginger, and garlic.
  3. Soak the red cabbage, bok choy, onion, and cilantro stems in the dressing for ten minutes.
  4. Place the entire contents of the bowl in a hot wok or iron pan; cook covered for 3-4 minutes.
  5. Lower the heat, and fold in the snow peas and yellow pepper. Cook for 1 minute more.
  6. Remove from heat, place on a large platter, garnish with the cilantro leaves.
