Sweet Potato Pancakes

Ingredients

  • Cooking spray
  • 2 sweet potatoes, peeled
  • 2 small onions, grated
  • 2 egg whites
  • 1 tsp canola oil
  • 4 Tbsp whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp ground ginger
  • 1 Tbsp fresh lemon juice
  • 2 pinch salt, to taste (optional)
  • 2 pinch black pepper
  • ½ cup applesauce, unsweetened
  • ½ cup plain nonfat yogurt

Preparation

  1. Preheat the oven to 375o F. Spray an 8 x 8 inch pan with the cooking spray.
  2. Grate the potato into a strainer. Run under cool water until the water is clear. Drain to remove all excess water.
  3. Mix the onion, egg white, and oil in a bowl. Mix in the potato.
  4. In a separate bowl, mix together the flour, baking soda, and ginger, then add to the potato.
  5. Stir in the lemon juice, salt, and pepper.
  6. Spread the potato combination into the pan and bake for about 15 minutes or until browned on the top and bottom.
  7. Let cool for 5 minutes, then divide into 2-inch squares.
  8. Serve each with 2 tablespoons of applesauce and 2 tablespoons of yogurt.
