Turkey Picadillo Burritos

Ingredients

  • 1 Tbsp. canola oil
  • 1 medium red onion, chopped
  • 1 ½ lb. lean ground turkey
  • ½ tsp. garlic powder
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground cumin
  • ¼ tsp. ground black pepper
  • 1 8 oz. can low sodium tomato sauce
  • 1 11 oz. can no salt added corn, drained
  • ½ cup golden raisins
  • 1 avocado, diced
  • ¼ cup cilantro
  • 10 8” whole wheat tortillas

Directions

  1. Preheat oven to 400ºF.
  2. Heat oil in a large, nonstick skillet over medium-high heat. Add onion and crumple in turkey; cook, stirring occasionally, for 7-8 minutes or until onion is no longer tender and turkey is no longer pink.
  3. Stir in garlic, cinnamon, cumin, pepper, and tomato sauce. Simmer, covered, for 5 minutes, stirring occasionally.
  4. Meanwhile, warm burrito shells in oven or microwave.
  5. Add corn and raisins to turkey mixture and simmer for an additional 2 minutes.
  6. To serve, spoon ½ cup of turkey mixture into warmed whole wheat tortilla. Garnish with cilantro and avocado and roll as desired.

Yield: 10 servings
