Healthy Pasta Salad Niçoise with Avocado

Recipe Note: The name "Niçoise" refers to the French city of Nice, where this type of salad originated. The Niçoise salad is made up of a variety of vegetables topped with tuna and/or anchovy.

Ingredients

  • 2 cups whole wheat pasta
  • ¼ cup chopped fresh basil
  • 2 cloves garlic, minced
  • ¾ cup diced tomato
  • ½ ripe avocado, diced
  • ¼ cup thinly sliced red onion
  • 2 tablespoons chopped black olives
  • ¼ teaspoon crushed red pepper flakes
  • ¼ cup bottled fat free Italian dressing
  • 1 can (6 ounce) water-packed tuna, drained and flaked
  • 4 green leaf lettuce leaves

Directions

  1. In a large saucepan, cook the pasta according to the package directions.Drain, then rinse briefly under cold water. Drain.
  2. In a small bowl, combine the Italian dressing, basil, garlic, and crushed red pepper.
  3. In a large bowl, combine the pasta, tuna, tomato, avocado, red onion, and olives.
  4. Add the dressing and toss until evenly coated. Line plates with the lettuce leaves and spoon the salad on top.

Yield: 4 servings
