Salmon Sliders

Ingredients

  • 12 oz salmon fillets
  • ½ cup dill weed sprigs
  • 5 oz. white wine
  • 1 cup crimini mushrooms, sliced thin
  • ½ cup vidalia onion, chopped
  • 1 Tbsp extra virgin olive oil1 cup baby spinach
  • 1 Tbsp garlic, minced
  • 4 whole wheat dinner rolls
  • 1 medium tomato, sliced
  • 4 tbsp hummus

Preparation

  1. Place 4 - 3 oz pieces of salmon in an oiled shallow pan
  2. Pour ½ cup white wine over fish and sprinkle lightly with dry or fresh dill
  3. Cover with foil
  4. Bake at 300 degrees 15 minutes set aside
  5. Saute onion, mushrooms and garlic in 1 Tbsp olive oil
  6. Steam baby spinach
  7. Assemble salmon slider – 1 whole wheat roll, 1 piece salmon, ¼ cup mushrooms and onion, small amount of steamed spinach and 1 tomato slice.
  8. Top the sliders with 1 Tbsp Romesco Sauce (see separate recipe) and 1 Tbsp hummus
