Holiday Turkey Roulade

Ingredients

  • 2 lbs raw turkey breast
  • 4 slices whole wheat bread, cubed
  • 1 egg
  • Pinch salt and pepper
  • ¼ tsp poultry seasoning
  • 1 Macintosh apple, peeled, seeded, and chopped
  • ¼ cup fresh cranberries or ¼ cup cranberry sauce
  • ½ red bell pepper, diced fine
  • Spinach or arugula leaves

Preparation

  1. Pound out the turkey breast to ¼-inch thick on a sheet of plastic.
  2. Mix together the bread cubes, the egg, and a pinch each of salt and pepper; add poultry seasoning.
  3. Add the chopped apple, cranberries, and diced red pepper to the bread mixture.
  4. Spread the bread mixture evenly over the turkey breast.
  5. Place the spinach or arugula leaves on top of the mixture for color
  6. Starting with the end closest to you, tightly roll the turkey over itself, like a rollup or burrito. When you get to the end, tightly wrap the roulade in plastic, and then wrap the entire product in foil and twist the ends tightly.
  7. The roulade can now be steamed for 25 minutes, or roasted in a 275o oven for 45 minutes. The inside temperature must be 165 degrees.
  8. Let the roulade cool, then unwrap it and cut 1-inch pieces on the diagonal. Serve with a little bit of your favorite sauce or with a good mustard.
