Autumn Squash

Ingredients:

  • 4 tsp extra virgin olive oil
  • 2 cups fresh chopped onion
  • 4 cups acorn squash, cubed
  • 2 Tbsp chopped walnuts
  • 2 pinches salt and pepper (to taste)

Directions:

  1. Heat oil in a saucepan over medium heat.
  2. Steam cubed squash for 2-3 minutes to soften.
  3. Sauté onions and squash for 8 minutes.
  4. Add walnuts and continue sautéing for another 2 minutes.
  5. Add salt and pepper before covering and removing from heat.
  6. Let sit about 10 minutes before serving.

Yield: 4 servings
