Baked Stuffed Chicken with Spinach and Goat Cheese

Ingredients

  • 2 6-oz boneless skinless chicken breast
  • 1 oz goat cheese
    3 oz baby spinach
  • ⅛ cup of onion, chopped
  • 1 teaspoon Mrs. Dash
  • 2 teaspoon olive oil

Directions

  1. Pre-heat oven to 375°. Flatten chicken breasts, between plastic wrap to a ¼ inch thickness.
  2. Sauté spinach and onion in a sauce pan with 1 teaspoon of olive oil, set aside cool to room temperature.
  3. Combine spinach and goat cheese, and mix thoroughly.
  4. Place mixture in center of chicken breasts and fold the chicken over the filling.
  5. Heat 1 teaspoon of olive oil in skillet over medium heat. Place chicken
    breasts in a sauté pan seam side down, quickly brown top and bottom and finish in 375° oven, for approximately 20 minutes, until internal temperature reaches 165°

Yield: 2 servings
