Brown Rice with Apples, Raisins, and Almonds

Ingredients

  • 1 cup long-grain brown rice, rinsed
  • 1 ½ cups unsweetened apple juice
  • 1 cup water
  • ¼ cup raisins
  • ½ tsp cinnamon
  • ½ cup chopped almonds
  • ¼ cup diced apple

Directions

  1. In a sauce pan, combine all ingredients and bring to a boil.
  2. Cover and reduce heat to low.
  3. Continue cooking for 45 minutes or until liquid has evaporated.
  4. Let the rice rest for 5 minutes and serve.

Yield: 6 servings
