Greek Couscous Salad with Walnuts

Ingredients:

  • 1 cup whole wheat couscous
  • ½ cup red peppers
  • 1/3 cup scallions or chives
  • 1/3 cup red onion
  • ¼ cup diced black olives
  • 1 ½ oz. feta cheese
  • 1 tsp oregano
  • 2 Tbsp lemon juice

Directions:

  1. Bring 2 cups of water to a boil.
  2. Add 1 cup of couscous and simmer for 8 minutes.
  3. Drain and cool.
  4. Add remaining ingredients.
  5. Toss in a bowl and serve.

Yield: 8 servings
Serving Size: ½ cup
