Haddock with Romesco Sauce

Ingredients

  • 24 oz. fresh haddock fillets
  • 1 whole lemon
  • A pinch of salt
  • A pinch of pepper
  • 1 Tbsp olive oil

Directions

  1. Saute 6 oz. haddock fillets in a hot iron skillet with 1 Tbsp oil.
  2. Season with salt, pepper, and lemon.
  3. Bake at 350o for 10 minutes.
  4. Serve with side of Romesco sauce (see Romesco Sauce Recipe)

Yield: 4 servings
