Rainbow Salad

Ingredients:

Dressing:

½ cup red wine vinegar
¼ cup shallots, minced
1 tsp honey
1/8 tsp black pepper
1/3 cup olive oil

Salad:

½ head cabbage, shredded
1 ½ apples, thin-sliced
½ head romaine lettuce, chopped
1 ½ pears, sliced thinly
½ mango in small chunks
½ cup pecan pieces, roasted
½ cup dried cranberries
½ cup blue cheese, crumbled
¼ tsp black pepper

Preparation:

Dressing:
1. Combine first four ingredients, then slowly whisk in the
olive oil. Refrigerate.

Salad
1. Combine all ingredients, refrigerate 1 hour covered.
Pour on dressing and serve
