Rainbow Salad

Ingredients

Dressing

  • ½ cup red wine vinegar
  • ¼ cup shallots, minced
  • 1 tsp honey
  • 1/8 tsp black pepper
  • 1/3 cup olive oil

Salad

  • ½ head cabbage, shredded
  • 1 ½ apples, thin-sliced
  • ½ head romaine lettuce, chopped
  • 1 ½ pears, sliced thinly
  • ½ mango in small chunks
  • ½ cup pecan pieces, roasted
  • ½ cup dried cranberries
  • ½ cup blue cheese, crumbled
  • ¼ tsp black pepper

Preparation

Dressing

  1. Combine first four ingredients, then slowly whisk in the olive oil.
  2. Refrigerate.

Salad

  1. Combine all ingredients, refrigerate 1 hour covered.
  2. Pour on dressing and serve
