Ricotta Mousse with Berries

Ingredients

  • 1 cup light ricotta cheese
  • ½ tsp finely shredded orange peel
  • ½ cup sliced strawberries
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • ½ cup fresh blackberries
  • 1 tsp lemon juice
  • 2 tsp honey
  • Fresh mint leaves (optional)

Directions

  1. In a small bowl whisk together ricotta and the orange peel. Cover and chill for 1 to 24 hours.
  2. n a medium bowl combine the berries and lemon juice. Cover and let stand at room temperature 15 minutes to develop flavors."
  3. To serve, divide fruit mixture among four dessert dishes, spooning any juice over fruit in dishes. Top with ricotta mixture. Drizzle with honey. If desired, garnish with mint.

Yield: 4 servings
