Spinach Dip

Ingredients

10 oz. spinach, frozen
2 Tbsp red wine vinegar
3 medium garlic cloves, minced
½ oz fresh mint, minced
1 cup reduced fat sour cream
1 pinch ground black pepper

Directions

  1. Let the packaged spinach defrost, using microwave on high 3-4 minutes.
    Drain water until spinach is completely dry.
  2. Add all the ingredients to the spinach and mix together. Chill for 2 hours.
    Serve with bread, crackers, vegetables, pita wedges, or breadsticks.

Yield: 12 servings
Serving Size: 2 Tbsp.
