Sweet Orange Salmon

Ingredients

2 tablespoons brown sugar
1 teaspoon chili powder
½ teaspoon grated orange rind
½ teaspoon ground cumin
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon ground coriander
1/8 teaspoon black pepper
5 salmon fillets (4-ounce each)

Directions

1. Preheat broiler.
2. Combine first 8 ingredients in a small bowl. Rub spice mixture over
both sides of salmon fillets. Place salmon on a broiler pan lined with
foil. Broil for 8 minutes or until salmon flakes easily when tested with a fork.
3. Optional: For a little added flavor, squeeze fresh orange juice over the salmon

Yield: 5 servings
